They formed a World-Class Team of pioneering Chefs in Bali, producing a varied menu of classic French dishes with a local flair. Chef Nicolas, formerly at Kafe Warisan, brings his legendary talent and culinary artistry to the tables of one of Bali's most elegantly sophisticated settings. Also part of the team are Executive Chef Arief Wicaksono and Executive Sous Chef Putu Sudarsana, who are as adept as Chef Tourneville at raising the culinary delights of their clients to new heights.
Said Alem's love of food runs in the family. Whenever his mother went to the market Alem sneaked into the kitchen to join his brother who was a chef. At age 15, he began an apprenticeship in Normandy, France. After graduating, he travelled the world, working in ski resorts from the South of France to Australia.
When he arrived in Bali everything about producing good food made sense. He first catered for private parties, then started a croissant bakery and delivery service, then he became the chef at the Bali Bird Park's restaurant. When Alem learned that Kafe Warisan was looking for new management, he called Chef Nicolas 'Doudou' Tourneville in France and the Chef arrived with his tools of the trade. After a time at Kafe Warisan, they started Métis.
Chef Arief Wicaksono, who began his career in 1995 in Bal, has tickled palates at top restaurants and resorts in Bali and Dubai. He has served with distinction at KU DE TA, Radisson Hotel, Conrad Bali Resort & Spa, Karma Kandara Resort Residence in Bali, and at The Elements Restaurant and Hive Restaurant in Dubai.
The Chef and his team welcome loyal Kafe Warisan patrons as well as new friends from across the world to share in their love affair with food in the elegantly comfortable ambiance of Metis, ably assisted by over 100 staff members in the kitchens and on the restaurant floor.
Lunch or dinner starts in one of the stunning Bar Lounges overlooking the rice fields on the terrace and veranda levels. Diners can chill out in the comfortable chairs in the terrace lounge while tuning into vibes from the full bar downstairs, or lounge in the seductive upstairs veranda lounge with a glass of pinot or expertly-mixed cocktail.
Colourful cocktails and exclusive wines from all across the world is just the beginning of the drink experience at MÉTIS. Diners can enjoy special wines by the glass or bottle while picking through 'petit plats' or 'tapas'.
PRIVATE CELLAR DINING
The experience starts by entering through a striking pair of glass doors which lead guests into an ambience rich with comfort and lushness. Brass fittings, original artwork and walls lined with wines from around the world, enhance an already impeccable service and the sublime cuisine of 6 degustation menus tailored exclusively by Chef Nicolas Tourneville and Executive Chef Arief Wicaksono for just 10 guests or less.
PRIVATE FUNCTIONS ROOM
Celebrations for up to120 individuals are held in the air-conditioned function room with its panoramic view of magnificent terraced rice fields, which is the ideal backdrop for special occasions: wedding receptions, luncheons, cocktail parties, anniversary parties, business meetings or corporate events. A full private bar serves the select invitees.
