Mozaic Restaurant is renowned as a fresh oasis of ingenuity in the world of gastronomy. It is the uniqueness of the experience that has become the hallmark of its reputation, encompassing the quality of the ingredients, the perfect preparation, the sheer multitude of flavours and the quality of the service, all to be enjoyed in a lush tropical setting.

Mozaic's ever-changing menu consists of à la minute creations which evolve according to market availability of the freshest produce. Chef Salans and his Chef de Cuisine prepare what inspires them at the moment, orchestrating their menus like a symphony, a sequence of marvellous colours and flavours served by knowledgeable staff before the sommelier indulges guests with his expertly paired wines. Mozaic is a dining experience unrivalled in Bali.

Mozaic Restaurant and Chef Salans have been honored with international praise for the excellence of their cuisine and the beauty of the setting. Mozaic is the first restaurant in Southeast Asia selected by Traditions & Qualité as one of Les Grandes Tables du Monde (Great Tables of the World), joining an exclusive membership including world most famous restaurants such as Lucas Carton (Alain Senderens), Le Louis XV and Plaza Athénée (Alain Ducasse), Guy Savoy (Guy Savoy) and The French Laundry (Thomas A Keller).

Mozaic also receives awards year after year from Wine Spectator. It is the only Indonesian restaurant to be selected as one of the 100 World's Best in the San Pellegrino Guide.

Mozaic Restaurant now offers three innovative tasting menus that will provide different levels of experimentation. To begin your gastronomic discovery of seasonal ingredients and the intriguing flavours of Indonesia, Chef will present you with a plate of key ingredients to be touched, smelled and taste.

The Grand Menu

Available as either a 6 or 8 course degustation, the menu showcases a unique culinary style that combines the best of local and international ingredients, prepared and presented with a modern approach.
Western culinary decadence in the form of foie gras, Norwegian salmon and succulent Victoria lamb, is seamlessly juxtaposed against locally sourced, seasonal ingredients such as Sundanese 'Kluwek', young Balinese jackfruit and Javanese pomelo.

Vegetarian Menu

6 courses of vegetarian indulgence, combining over 30 varieties of local organically grown seasonal vegetables, herbs and flowers delicately combined with Indonesian spices to form a beautifully balanced  menu.

Surprise Menu

6 surprise dishes that masterfully combine the most precious and finest seasonal ingredients from around the world, such as truffles, lobster, caviar, mushroom, with the most unique and interesting flavours to be found across the Indonesian archipelago. This culinary tour de force is Mozaic's signature menu and has caused the restaurant to earn the various international accolades bestowed upon it.


The Mozaic Chef and Sommelier have worked together to provide the perfect wine pairings from their internationally awarded wine list. There are two options, regular or premium for those wishing for ultimate decadence.

The Mozaic Lounge offers tasting and tapas menus.

The Tapas Menu is available for guests in the Mozaic Lounge and represents Mozaic's cuisine served tapas style. This presentation can cater for small or large appetites. The Tapas are presented in trios which can be ordered individually or in combination. The Lounge Menu consists of appetizer portions of Mozaic Restaurant dishes, along with cocktails and wines to re-create the Mozaic experience. Guests can order one or several dishes at a time.

The Lounge has a late-night 100 capacity and is open 7 days a week.

Private Dinner Experiences

The Private Dinner Experience at The Workshop consists of a dinner for groups of a minimum of six to eight guests up to a maximum of 36 guests.

True to Mozaic's style of cuisine, the Chef will tailor design a menu - anything from three to six courses - taking into consideration your personal directives for food allergies or preferences. Wines and wine pairing are also available and recommended to fully appreciate each dish's subtle nuances.

Wine Spectator Award of Excellence

The Wine Spectator's Restaurant Awards recognize restaurants whose wine lists offer interesting selections, are appropriate to their cuisine and appeal to a wide range of wine connoisseurs. To qualify for an award, the list must present complete, accurate wine information and must include vintages and appellations for all selections, including wines available by the glass. Complete producer names and correct spellings are crucial, and the overall presentation and appearance of the list is also taken into consideration. After meeting these basic requirements, lists are judged for one of the awards. Typically, the list should offer at least 100 selections.

Opening hours

Operation Days & Hours: Mozaic is open 7 days a week from 6 pm - 12.30 am. The first reservation is accepted at 5.45pm and the last reservation is at 9.45pm. Access to the restaurant is limited to children of 12 years or older.
